As its name suggests, this competition lot offers 
a harmonious symphony of floral notes. This Ethiopian landrace varietal, cultivated in Colombia’s Huila region, undergoes a meticulous process to enhance its vibrant fruitiness and intense aromatics. Only cherries from the healthiest trees, picked on rain-free days, are selected. They undergo anaerobic fermentation, controlled oxidation, and are then submerged in hot water infused with mosto from the same variety. Finally, precision drying ensures the coffee’s pristine quality, preserving its complexity and elegance.
