This phenomenal Gesha was selected from the farm of producer Alex Arango, La Colmena. Alex delivers his Gesha lot to the La Aurora washing station, where it is processed as a Natural. The cherries are left to rest for 24 hours after harvest, allowing the fermentation to begin. They’re then transported to another washing station where they rest for a further 48 hours before being moved to drying beds in a greenhouse for 15 days. At last they’re finished in a mechanical dryer. The greenhouse and mechanical dryer allow for incredible control and consistency in the processing of this unique varietal, creating vibrant and complex tropical and floral notes in the final cup.
