This coffee is part of a series of cooperatives involved in a reforestation pro- gram in Peru, created as a communal blend from 18 local producers. The farms range from 1500 - 2000masl, each having their own wet mill on site to ensure adequate depulping, washing and drying after harvest. Each coffee has to pass a quality check to be part of the particular Cedros lot, incentivising the increase in quality each year of production. The coffees are also pre-contracted so that the producers can invest back into their farms after harvest. The resulting coffee has honey-like sweetness and mild florals, offering a balance and structured cup.
