Thanks to some incredibly motivated producers, some of the coffees out of the relatively unknown region of Brunca are blowing us away. The Alvarado family are some of these motivated producers, growing coffee at the base of Chirripo, the highest peak in Costa Rica. This particular Honey lot also goes through a 'Reposado' period, where the picked cherries are first left to 'rest' in a shaded tank before being pulped. This resting period has been found to increase the fruit character we have come to love from these coffees. The cherries are then pulped, piled up and moved infrequently for the first days to allow for a controlled fermentation, before being spread out more evenly to get adequate moisture content for export.
