For our third year, we are happy to release this Bonanza Exclusive lot from our friends at Finca El Salvador. Recently they found that the particular lot of 60+ year old Bourbon trees, that were the first to be planted at the farm, displayed higher cup quality than the newer trees. The result is what is now referred to as Borbonera, and it is the cherries from this lot that make up this spectacular coffee. The cherries are soaked in a Kombucha solution, creating new levels of bacteria and fermentation, adding to the complexity in the final cup. This coffee sits on the line between natural and infused coffees, but allowing for a unique drinking experience.
