This is now our fourth year buying from our friend Carlos Montero, and although travel to Costa Rica was too difficult this harvest, we are happy to still be able to share with you 2 of his most sought-after lots once again. La Pastora is Carlos’s most prized farm, located in the perfect micro-climate at the highest altitude of his land. As an old apple orchard, the land is cut into small patios, that proved to be beneficial for the Catuai plants that were cultivated here, resulting in an elegant and clean cup profile. This particular lot was processed as a Reposado, a simple yet effective process of letting the cherries rest in bags immediately after being picked and before being placed on the drying beds. This allows for a more pronounced fruit character in the cup, whilst maintaining a clean and balanced profile.
