For the second year, we offer another incredible Pacamara from Alvaro Moises and his family. To reduce the chemical use at the farm, Alvaro recently started planting Liberica trees to attract the Broca insects, known for destroying coffee trees. As Liberica harvests before the Arabica, he is able to negate the damage caused to his coffee production. This particular lot is stored for 48hrs in a low-oxygen environment in bags that are constantly moved to ensure even maceration of the fruit flesh. Together with the low-oxygen environment this allows the unique aromas of the fermentation to penetrate the beans, resulting in a wonderfully intense and fruity flavor profile, with a syrupy texture and balanced acidity.
