For the 4th year we are incredibly happy to offer this wonderful lot from the world renowned Don Eli wet mill, owned by our good friend Carlos Montero and his family. Carlos’s Son Jacob controls all processing at the wet mill, and for this particular lot, the picked cherries rest for a couple of days intact before being pulped and dried as a Honey, this resting time has been found to increase the complexity, fruit character, and acidity in the final cup, making this a wonderfully balanced and elegant cup.
